Honey Dijon Spicy Salmon

I hadn't really eaten salmon until about 3 years ago, when we moved out on our own in Calgary and started making trips to Costco. Mike suggested we buy some, and I was skeptical because I had never cooked it, nor did I think I would like the taste (I didn't really try many new foods back then, big mistake!). I ended up absolutely loving this fish, and it has become a constant in our diet. I'm always looking for new marinades when cooking any meat or fish, and yesterday I hadn't had time to look up any recipes before I got home. So I just threw something together, and it ended up being delicious!

Marinade
-3 to 4 tbsp olive oil
-2 tbsp fresh lemon juice
-2 tbsp red wine vinegar
-1 tbsp dijon mustard
-2 tbsp honey
-2 tsps chili flakes
-1/2 tsp fresh ground pepper

I cooked the salmon in foil in the oven for 20 mins at 350 degrees.

For sides I made quinoa and spinach salad with tomatoes and my balsamic salad dressing. I used the marinade that had cooked with the salmon as a sauce.

I piled mine all on top of each other so it kind of made a salmon/quinoa/spinach salad and it was soooo yummy!
