Honey Dijon Spicy Salmon

I hadn't really eaten salmon until about 3 years ago, when we moved out on our own in Calgary and started making trips to Costco. Mike suggested we buy some, and I was skeptical because I had never cooked it, nor did I think I would like the taste (I didn't really try many new foods back then, big mistake!). I ended up absolutely loving this fish, and it has become a constant in our diet. I'm always looking for new marinades when cooking any meat or fish, and yesterday I hadn't had time to look up any recipes before I got home. So I just threw something together, and it ended up being delicious!

Marinade
-3 to 4 tbsp olive oil
-2 tbsp fresh lemon juice
-2 tbsp red wine vinegar
-1 tbsp dijon mustard
-2 tbsp honey
-2 tsps chili flakes
-1/2 tsp fresh ground pepper

I cooked the salmon in foil in the oven for 20 mins at 350 degrees.

For sides I made quinoa and spinach salad with tomatoes and my balsamic salad dressing. I used the marinade that had cooked with the salmon as a sauce.

I piled mine all on top of each other so it kind of made a salmon/quinoa/spinach salad and it was soooo yummy!

Clean Eating Apple Cinnamon Muffins

I made these muffins on the weekend and they are yummy. I've been eating them as part of my breakfast in the morning with either granola and blueberries or Greek yogurt and fruit and they are a perfect addition:)

Here is the recipe.
The only difference I had from the recipe (which was not on purpose!) was that 1/4 of a yolk fell in when I cracked one of the eggs. Oops!

Clean Eating Turkey Noodle Soup

I hosted my very first Easter dinner this year, including a 12 lb turkey. 12 lbs was a little much for the 6 people having dinner however, so needless to say I had A LOT of turkey left over. Mike and I have been eating turkey almost every day since Saturday, and finally it was time to make some soup. I have never made a chicken/turkey noodle soup, so I wasn't sure how it would turn out. It was yummy!
I didn't make this one from a recipe I found...I just threw it together, so here is what was in the pot (I probably made enough for around 8 bowls of soup):

-4 cups low sodium organic chicken stock
-1 cup turkey drippings (I saved these from the pan when I made the turkey and it was basically just water and spices)
-3 cups water
-1 tbsp oregano
-1 tbsp basil
-1/2 tbsp bay leaves
-2 cups cooked whole wheat pasta (I had macaroni in my cupboard)
-3 large carrots chopped
-3 celery stalks chopped
-1 small onion chopped
-2-3 cups cooked turkey chopped

1. Bring the stock, drippings, and water to a boil
2. Add in veggies and spices, cook for about 8 mins
3. Cook pasta in separate pot
4. Add cooked pasta and cooked turkey into soup
5. Simmer for another 5 mins or so

Clean Eating Lemon Muffins

Yesterday, after I got some clean turkey chili started in the slow cooker, and had some clean butternut squash soup on the stove, I decided I wanted to try making some muffins. I had wanted to try making these lemon muffins for some time and had already gotten the ingredients a while back, but still hadn't had time to make them. So since the puppy was taking a nap while I worked away in the kitchen I decided this was the perfect time!
They turned out really good!
Here is the recipe.
The only difference was that I used regular whole wheat flour, I still haven't been able to find whole wheat pastry flour. I think a trip to Whole Foods is coming soon...

Moksha Challenge: Day 14

This is the second Sunday of the challenge now, and both Sundays did not have a quote/word of the day posted. So I'm assuming Sunday is a day off!

Anyways, I practiced the Moksha flow at 10am with Paris. She is one of the co-owners, and I really enjoy being guided through practice with her. She challenges the students a lot more I find. Here are some of the poses I really enjoyed from today's class:
-crow
-triangle (in it's full form not just Moksha triangle where your wrist only sits on the inside of your knee), hand to a block or the ground on the inside or outside of your foot
-folding triangle

I've decided that it is quite time consuming writing a post every day, so I will be writing one post for days 15-30 instead.

Moksha Challenge: Day 13

Saturday morning and I managed to get myself to the 8:30am class! I had a busy day planned so I had to make sure I got my practice in somehow. It was a great flow class!

I really enjoy this quote. This goes back to something I learned during my 40 day challenge about being reactive. Often times we just start reacting (by talking...or yelling) instead of listening to the full story. It makes me think of how sometimes when I am in a conversation with someone I can't seem to get a word in edgewise. I wait for them to finish, then when I am ready to say my piece about whatever it is we are talking about, I get cut off and they just want to talk about themselves. I notice this more now because I'm the one listening now. Interesting!

Today I did the Moksha 7pm class. It was a typical class for me, but my back was starting to feel stiff. Not sure why, but it made the class a little more challenging.
