Mother's Day Healthy Cheesecake Tartlets

I decided to make a nice little dessert to bring over to Mike's parents for Mother's Day this year. I stumbled upon this recipe by accident while looking for a quesadillas recipe. At work (a collision repair centre) we say that we meet nice people by accident, well I think that applies here. Except in this case it's not a person, it's an amazing little dessert.
I loved them for the following reasons:
a) they are incredibly easy to make
b) they are oh so yummy and,
c) how cute are they?!

Check out the recipe here. If you love cheesecake, but are trying to find a healthier alternative, do the right thing and MAKE THESE!
So the recipe says that you will have 4oz of filling leftover, but I used it all! What am I going to do with 4oz of leftover cheesecake filling? For the fruit preserves, I used Natur Le Fruit Blueberry Fruit Spread, which you can purchase at any The Real Canadian Superstore or Fortinos. I used a 1/2 teaspoon spoon from my measuring spoons to spoon it into the tart (too many spoons in that sentence?). I used raspberries and blueberries for topping.

I brought the leftovers to work and they were gone by the end of the day. One of the guys was asking me about them and had no idea that they were a healthier version, he just said that they were very good.
Mike has asked me to try making this as a full sized cheesecake, so that will be my next dessert task.

I bet you can't eat just one!
